Grilled Lemony Chicken Kabobs

Plump pieces of marinated chicken are threaded onto wooden skewers along with red bell peppers, zucchini and whole mushrooms - lots of color and flavor

Ingredients

    Marinade
  • 3/4 cup La Choy® Soy Sauce
  • 1 can (6 oz each) frozen lemonade concentrate
  • 1 can (6 oz each) pineapple juice
  • 1/4 cup fresh lemon juice (1/4 cup = about juice of 1 large lemon)
  • 1 tablespoon toasted sesame oil

    Kabobs
  • 1-1/2 pounds boneless skinless chicken breast halves, cut into 24 (1-inch) cubes
  • 12 long bamboo skewers
  •   PAM® Grilling Spray
  • 3 small red bell peppers, each cut into 12 pieces
  • 2 medium zucchini, each cut into 12 (1/2-inch) pieces
  • 24 medium fresh button mushrooms, stems removed
  • 2 tablespoons Pure Wesson® Vegetable Oil
Directions
  1. Make Marinade: Place all 5 ingredients in large resealable food storage bag; seal. Work mixture with hands until combined. Remove 3/4 cup marinade; set aside.
  2. Add chicken to bag; seal. Turn to coat chicken with marinade. Refrigerate 2 hours or overnight, turning occasionally. Soak skewers in water at least 30 minutes before using.
  3. Spray grate of cold grill and utensils with grilling spray. Preheat outdoor grill on medium heat 20 minutes. Assemble kabobs by placing 1 piece each of red pepper, chicken, zucchini and mushroom on each skewer. Repeat ingredients again and end with red pepper. Discard bag with marinade.
  4. Brush kabobs with oil. Place on grill and cook 10 to 12 minutes or until chicken is cooked through, turning 1 or 2 times. Brush with reserved marinade and serve.
